Ballıçubuk Toros Highland Honey is harvested from the rich flora thriving on untouched slopes and plains of the Toros Mountains at elevations reaching up to 2,200 meters. Its nectar sources include mountain wildflowers as well as the blossoms of a rare rose variety known locally as the “İpar rose.” The colonies are managed in line with organic beekeeping principles, with no unnecessary intervention during nectar flow. The harvested honey is jarred under controlled, documented processes, following low-heat handling discipline and in compliance with the Food Codex HMF standard

The cool air of high altitude and the short growing season lend the honey a distinct clarity and a long, lingering aroma. From the first taste, the fresh and vibrant profile of mountain flowers is evident, followed by the elegant whisper of the Ipar rose. No artificial sweeteners, colorants, or thickeners are used; the honey in the jar is nature’s pure offering.

At Ballıçubuk, method is paramount. Guided by the counsel of old masters, we process honey without haste and without tiring it. HMF checks are carried out regularly, and each batch is recorded under a traceable batch/lot number. The hygienic glass jar preserves aroma and flavor integrity; the neutral nature of glass prevents external influence from affecting the honey.

Toros highland honey pairs beautifully at breakfast on its own, and it also complements clotted cream, strained yogurt, and tahini in a traditional harmony. When lightly drizzled as a final touch over milk-based desserts, it adds a rounded finish. In herbal teas, used in moderation in place of sugar, it provides natural sweetness. To preserve its aromatic liveliness, avoid overheating; adding it at the end is preferred.

Depending on the harvest, the color may range from light amber to medium amber. Natural crystallization (granulation) may develop over time; this is a natural behavior of genuine honey. If desired, the jar may be gently liquefied in a warm water bath with the lid closed; do not expose it to high heat.

Store in a cool, dry place away from direct sunlight, with the lid tightly closed. Moisture, odors, and temperature fluctuations may affect flavor balance. Use a clean spoon each time. As a general precaution, honey is not recommended for children under one year of age.
